Bruschetta Pasta Recipe

Ingredients
  • 400F g linguine .
  • 1 red onion, sliced .
  • 1/2 c roughly torn fresh basil .
  • 4 ripe tomatoes, roughly sliced .
  • 2 tbsps fresh oregano leaves .
  • 1 tbsp red wine vinegar .
  • 2 tbsps extra virgin olive oil .
  • 1 garlic clove, crushed

Directions
  • Step #1 Cook the linguine a large saucepan of boiling salted water according to packet instructions.
  • Step #2 Meanwhile, mix all the remaining ingredients In a large-ish bowl & season this with sea salt & freshly ground black pepper.
  • Step #3 Allow to stand for 10 mins to let the flavours infuse.
  • Step #4 Drain the pasta, then add to the other ingredients & toss to mix.
