Passionfruit Islands With Banana Mango Cream Recipe

Ingredients
  • 1/4 c corn syrup .
  • 1 small banana (over-ripe) .
  • 1/2 c passion fruit pulp .
  • 3/4 c milk .
  • 1/2 c caster sugar .
  • 1 small mango .
  • 3 egg whites .
  • 2 egg yolks .
  • 1/4 c caster sugar (extra) .
  • 1/4 c sugar .
  • For the toffee

Directions
  • Step #1 Beat egg whites in small bowl with electric mixer until soft peaks form slowly add sugar, beat until dissolved; carefully fold in passionfruit pulp.
  • Step #2 Bring large frying pan of water to boil, reduce heat until water is simmering.
  • Step #3 Mould passionfruit mixture into egg shapes using two dessertspoons Drop shapes into simmering water poach on one side for about a min carefully turn with slotted spoon, poach another min.
  • Step #4 Remove the "islands" from water with slotted spoon, drain or-absorbent paper; cool.
  • Step #5 Continue poaching with remaining mixture.
  • Step #6 Mash banana with fork; you need 2 tbsps banana.
  • Step #7 Puree flesh of mango; you need 1/2 c puree.
  • Step #8 Bring milk to the boil in saucepan remove this from heat.
  • Step #9 Beat egg yolks & extra sugar in small bowl with electric mixer until thick & creamy.
  • Step #10 Gradually stir egg yolk mixture into hot milk.
  • Step #11 Stir constantly over heat, without boiling until mixture thickens slightly.
  • Step #12 Remove from heat, stir in the banana & mango.
  • Step #13 Pour into serving dish, top this with islands, decorate with toffee.
  • Step #14 For the toffee:.
  • Step #15 Stir sugar & corn syrup in saucepan over heat, without boiling until sugar dissolves.
  • Step #16 Boil rapidly, without stirring, until mixture turns a light golden brown; remove this from heat, uncovered, allow bubbles to subside.
  • Step #17 Dip two tsps back to back into toffee & pull toffee into thin strands.
