Cappuccino Cupcakes Recipe

Ingredients
  • 1 1/2 tsps instant coffee granules .
  • 1 3/4 c all-purpose flour .
  • 1 1/2 tsps baking powder .
  • 1/4 tsp ground cinnamon .
  • 1/4 tsp ground allspice .
  • 1/4 tsp salt .
  • 3/4 c sugar .
  • 1 c prepared vanilla frosting .
  • 2 eggs .
  • 1/2 c brewed coffee .
  • 3/4 c unsalted butter, softened .
  • 1 tsp vanilla extract

Directions
  • Step #1 Heat oven to 350 degrees.
  • Step #2 Line 12 muffin c (standard size).
  • Step #3 In bowl, baking powder, allspice, mix together flour, cinnamon & salt.
  • Step #4 Beat butter & sugar about 2 mins until light colored & smooth.
  • Step #5 Add eggs one at a time, beating well after each egg.
  • Step #6 On lowish speed, add floour mixture, alternating with brewed coffee.
  • Step #7 Fill each muffin c with 1/3 c each.
  • Step #8 Bake at 350 for 25 mins, or firm to the touch.
  • Step #9 Let ccakes cool in pan on wire rack for 5 mins, & then remove this from pan & let cool completely.
  • Step #10 While cooling ccakes, in a small bowl mix instant coffee, vanilla & 1 tsp of warm water.
  • Step #11 Stir until coffee is disolved.
  • Step #12 stir in the vanilla frosting until mixed & no streaks remain.
  • Step #13 Frost ccakes.
