Ingredients
  • 1 pinch dried red pepper flakes (to taste) .
  • 1/4 c rice vinegar (seasoned or unseasoned) .
  • salt .
  • 1 tbsp sugar .
  • 1 large cucumber

Directions
  • Step #1 Combine rice vinegar, sugar & red pepper flakes in medium bowl; mix well.
  • Step #2 Peel cucumber & cut in half lengthwise; scrape out & discard seeds.
  • Step #3 Cut into thin slices.
  • Step #4 Place sliced cucumbers in bowl with vinegar mixture.
  • Step #5 Cover up, put in the fridge overnight.
  • Step #6 Spice up to taste with salt before serving.
