Seafood And Rice Recipe

Ingredients
  • 1/2 tsp dried thyme .
  • 1 onion, sliced .
  • 4 tomatoes, peeled & sliced .
  • 2 tbsps oil .
  • 175 g cod, skinned, boned & cubed .
  • salt & pepper .
  • 2 bay leaves .
  • 2 spring onions, sliced, to garnish .
  • 2 stalks celery, sliced .
  • 115 g smoked bacon, rind removed, sliced .
  • 2 large garlic cloves, crushed .
  • 150 ml tomato sauce .
  • 115 g cooked peeled prawns .
  • 1 tsp cayenne pepper .
  • 2 c fish stock .
  • 1 c long grain rice

Directions
  • Step #1 Preheat the oven to 350°F Heat the oil In a large-ish saucepan & fry the bacon until crisp.
  • Step #2 Add the onion & celery & stir until beginning to stick to the pan.
  • Step #3 Add the garlic, herbs, cayenne pepper, tomatoes & seasoning & mix well.
  • Step #4 Stir in the tomato sauce, rice & stock & bring to a boil.
  • Step #5 Gently stir in the the fish & transfer to an oven proof dish.
  • Step #6 Cover up tightly with foil wrap & bake for 20-30 mins, until the rice is just tender.
  • Step #7 Stir in the prawns & heat through.
  • Step #8 Serve sprinkled with the spring onions.
