Florentine Rice Noodle Gratin Recipe

Ingredients
  • 1 (10 oz) package frozen sliced spinach, thawed, drained, & squeezed dry .
  • 1/4 tsp salt .
  • 1 1/2 c 2% low-fat milk .
  • 1/4 tsp ground nutmeg .
  • 1 1/2 c sliced onions .
  • 1 tsp sliced fresh rosemary .
  • 1/2 lb uncooked wide rice noodles (banb pho) .
  • 2 vegetable bouillon cubes .
  • 1 tsp olive oil .
  • 1 c grated swiss cheese, divided .
  • 1 (8 oz) package light cream cheese .
  • 1/4 tsp black pepper

Directions
  • Step #1 Preheat oven 375°.
  • Step #2 Cook noodles in boiling water 5 mins or until done; drain & rinse with cold water; drain well.
  • Step #3 Combine milk, ½ c Swiss cheese, rosemary, & the next 5 ingredients in a mixer or food processor/blender; process until smooth.
  • Step #4 Heat oil In a large-ish pot over med-heat/flame; add in onion; stir/saute 5 mins or until tender.
  • Step #5 Remove pot from heat; stir in the noodles, cheese mixture, & spinach.
  • Step #6 Transfer mixture to an 8-inch square baking dish coated with cooking spray; sprinkle with ½ c Swiss cheese.
  • Step #7 Bake for 20 mins or until bubbly.
