Cheese And Spinach Pancakes Recipe

Ingredients
  • 1 medium size egg .
  • 600 ml milk .
  • 175 g gruyere cheese, finely grated .
  • 15 g plain flour .
  • 375 g spinach, trimmed .
  • 125 g button mushrooms, sliced .
  • 1 small onion, finely sliced .
  • salt & freshly ground black pepper .
  • 4 tbsps oil .
  • 50 g butter .
  • 125 g plain whole wheat flour

Directions
  • Step #1 Place half the milk, the egg, wholemeal flour & seasoning to taste in a bowl & whisk until smooth.
  • Step #2 Heat ½ x tsp oil in a small frying pan & pour in sufficient batter to coat the base of the pan when tipped carefully.
  • Step #3 Cook until golden, then turn over & cook the other side.
  • Step #4 Repeat with the remaining oil (as needed) & batter to make approximately 8 pancakes.
  • Step #5 Preheat the oven to 190°C, 375°F, gas mark 5.
  • Step #6 Heat half the butter in a saucepan & add the onion & mushrooms.
  • Step #7 Fry carefully for 2-3 mins, then add the spinach & cheese along with some seasoning to taste.
  • Step #8 Cook for a further min.
  • Step #9 Divide the filling between the pancakes, reserving any excess liquid, roll them up & arrange in a greased ovenproof dish.
  • Step #10 Heat the remaining butter & stir in the the plain flour.
  • Step #11 Gradually add the remaining milk & any reserved liquid & cook over a medium heat for 2 mins, until smooth & thickened.
  • Step #12 Add seasoning, to taste, & pour the sauce over the pancakes.
  • Step #13 Cover up the dish with foil wrap & place this in the oven for 20 mins.
  • Step #14 Sprinkle top with freshly sliced parsley before serving.
