Ingredients
2 tbsps sliced red onions .
1 tsp kosher salt .
1 jalapeno pepper, seeded, sliced .
2 tbsps balsamic vinegar .
2 c orange juice .
1 tbsp honey .
4 oz maytag* blue cheese, crumbled .
1/2 c pecan halves, toasted .
1 head curly endive lettuce, washed, torn into pieces .
3/4 c olive oil .
2 granny smith apples, peeled, cored, cut into eighths .
1/2 tsp fresh ground pepper
Directions
Step #1 Place orange juice in small nonreactive pan over high heat.
Step #2 Bring to a boil & cook this until reduced to 1/4 c, about 35-40 mins.
Step #3 Can be made 2-3 days in advance, & put in the fridged.
Step #4 Place orange reduction, Balsamic Vinegar, & jalapeno in a food processor/blender fitted with metal blade, onion, process until smooth.
Step #5 With the motor running, slowly add the olive oil until emulsified.
Step #6 Add the honey, salt & pepper, process 2 seconds.
Step #7 Heat 3/4 c of the orange vinaigrette in a medium skillet over medium high heat.
Step #8 Add the apples, turning until just cooked through, & saute until golden brown, 2-3 mins.
Step #9 Remove to plate & cool to about room temp.
Step #10 Can be made a day in advance, covered in refrigerator, bring to about room temp before serving.
Step #11 Place endive in mixing bowl, toss with 4 tbsps of the remaining orange vinaigrette, season this with extra salt & pepper if desired.
Step #12 Pour remaining vinaigrette into squeeze bottle, if desired.
Step #13 Divide endive among 4 salad plates.
Step #14 Arrange 4 apple slices on each plate, garnish with pecans & Maytag blue cheese.
Step #15 Drizzle with remaining orange vinaigrette.
