Diane's Colcannon Recipe

Ingredients
  • 1/4 c butter, melted
  • 1/2 c milk
  • 1/2 small head cabbage, sliced
  • 2 1/2 lbs potatoes, peeled & cubed
  • salt & pepper to taste
  • 1 large onion, sliced
  • 4 slices bacon

Directions
  • Step #1 Place potatoes in a saucepan with enough water to cover.
  • Step #2 Bring to a boil, & cook for 15 to 20 mins, until tender.
  • Step #3 Place bacon in a large, deep skillet.
  • Step #4 Cook over medium high heat until evenly brown.
  • Step #5 Drain, reserving drippings, crumble & set aside.
  • Step #6 In the reserved drippings, saute the cabbage & onion until soft & translucent.
  • Step #7 Putting a lid on the pan helps the vegetables cook faster.
  • Step #8 Drain the cooked potatoes, mash with milk & season this with salt & pepper.
  • Step #9 Fold in the bacon, & onions, cabbage, then transfer the mixture to a large serving bowl.
  • Step #10 Make a well in the center, & pour in the melted butter.
  • Step #11 Serve as soon as possible.
