Dad's Gazpacho Recipe

Ingredients
  • 1/2 c onions, preferably Walla Walla or vidalia onions .
  • 1 garlic clove, to taste .
  • salt, to taste .
  • black pepper, to taste .
  • 1 c chicken broth (can be made vegetarian, exchange for vegan vegetable broth) .
  • 1 c cucumbers, seeded & cut into approx. 1/8th inch pieces .
  • 1/4 c olive oil .
  • 1 c tomatoes, sliced & seeded & cut into approx. 1/8th inch pieces .
  • 1 c v 8 vegetable juice or tomato juice .
  • 1-2 dash Tabasco sauce .
  • 1/2 c green peppers

Directions
  • Step #1 Add equal parts V-8 juice & chicken broth to crushed garlic clove In a large-ish pan (no heat.
  • Step #2 Add in olive oil, onions & green peppers.
  • Step #3 Chop seeded tomatoes & cucumbers to desired size (or use food processor/blender) & add to pan.
  • Step #4 Salt & pepper to taste.
  • Step #5 Add a dash or two of tabasco for flavor.
  • Step #6 Chill for at least 30 mins, 2 hrs or more are better for flavors to kick in! Serve with french bread, brie & pate` if available.
