Smoky Bean Soup With Lemon-pea Coulis And Sesame Flavored Shiita Recipe

Ingredients
  • 1/2 tsp ground oregano .
  • 1 large carrot, cubed .
  • 1/4 tsp tamari soy sauce .
  • 2 garlic cloves, minced .
  • 1 medium onion, sliced .
  • 1 c water .
  • 4-5 c vegetable stock .
  • 8 oz shiitake mushrooms, stemmed, sliced .
  • 2-3 drops liquid smoke (optional) .
  • 3 medium size potatoes, cubed .
  • 4 garlic cloves, minced .
  • 1/2 tsp herbes de provence (a fine herbes mix would work as well) .
  • 1 tsp fresh ginger, minced .
  • 2 tbsps olive oil .
  • 1 tsp toasted sesame oil .
  • 1 tbsp sliced fresh coriander .
  • 3 tbsps lemon juice .
  • 1 1/2 c green peas (fresh or frozen) .
  • 1 tbsp olive oil .
  • 1/4 tsp tamari soy sauce .
  • 1 celery, cubed .
  • 1 tbsp sliced fennel (optional) .
  • 1/4 tsp ground marjoram .
  • salt .
  • 1 (15 oz) can white kidney beans, drained & rinsed .
  • 1/2 tsp dried parsley .
  • 1/4 tsp dried tarragon

Directions
  • Step #1 In a deep saucepan heat the oil.
  • Step #2 Add onions & 4 garlic cloves, lightly sauté until soft.
  • Step #3 Add carrot & celery & fry at medium heat for 2 mins.
  • Step #4 Add the vegetable broth, salt, beans, potatoes, & spices.
  • Step #5 Bring to boil, reduce heat, & let simmer until all the vegetables are tender (~ 15 mins).
  • Step #6 Meanwhile, put the peas in cold water.
  • Step #7 Bring to boil & boil for 1 min, drain.
  • Step #8 Pure green peas, coriander, & fennel with a food processor/blender.
  • Step #9 Add lemon juice & a splash of Tamari sauce.
  • Step #10 Add water if the mixture is too thick (I had to add about 2 tbsp).
  • Step #11 In the skillet, heat up the olive oil (med.
  • Step #12 temperature).
  • Step #13 Add the sesame oil, ginger, garlic, & mushrooms.
  • Step #14 Fry for 2-3 mins.
  • Step #15 Mash the base with the potato-masher until thick, but chunky.
  • Step #16 Add the liquid smoke & adjust for saltiness.
  • Step #17 To serve, lade the soup in the plate.
  • Step #18 Put some mushrooms in the middle of the soup & pour the coulis around.
  • Step #19 Sprinkle top with sliced shallots, sprouts, & coriander.
