Ingredients
2 plum tomatoes, seeded & sliced .
4 large eggs .
1 c heavy cream .
extra-virgin olive oil .
4 slices whole grain bread .
2 scallions, finely sliced .
8 slices Canadian bacon .
salt .
8 oz sharp Canadian cheddar cheese, sliced (or shredded) .
4 tbsps butter .
black pepper
Directions
Step #1 Melt 1 tbsp butter over med-heat/flame in a small saucepan; add in tomatoes & scallions; season this with salt & pepper.
Step #2 Saute for 2 mins, then stir in the the cream; let it reduce for 10 mins over low heat/flame, stirring every once in awhile.
Step #3 Heat a large nonstick skillet over med-heat/flame; add 2 tbsps butter to skillet; let melt.
Step #4 Add the bread slices & cook for 3-4 mins on each side; transfer the slices to a platter.
Step #5 Add a drizzle of olive oil to the same pan; cook the Canadian bacon for 2-3 mins on each side; place 2 slices of bacon on each slice of bread.
Step #6 Add the remaining tbsp butter to the pan; when it has melted, add the eggs, giving each room to cook.
Step #7 Fry over soft or hard, as you like.
Step #8 Cover up the eggs with mounds of cheese; tent the pan in foil wrap to melt the cheese.
Step #9 Place each cheesy egg on a bacon-topped slice of bread; ladle the tomato cream sauce over each stack.
