Caterer's Slushy Punch Recipe

Ingredients
  • 1 tbsp almond extract .
  • 2 c boiling water .
  • 1 (3 oz) package gelatin .
  • 1 (46 oz) can pineapple juice .
  • 1/2 c lemon juice .
  • 2 (2 liter) bottles ginger ale or carbonated lemon-lime beverage .
  • 3 c water .
  • 2 c sugar

Directions
  • Step #1 Combine sugar with the 3 c water; heat until sugar is dissolved.
  • Step #2 Dissolve gelatin in 2 c boiling water; cool.
  • Step #3 Mix all ingredients EXCEPT the ginger ale or lemon lime & freeze In a large-ish plastic container for at least 24 hrs.
  • Step #4 About 1 hr before serving, turn frozen mixture into a large punch bowl & add the soda.
  • Step #5 To create a slushy texture, poke the frozen punch with an ice pick or large fork.
