Ingredients
2 tbsps vegetable oil
1 c lukewarm water
2 tbsps sesame oil
2 tbsps shortening or vegetable oil
2 tbsps oyster sauce
1 tbsp cornstarch
1 tbsp white sugar
1 green onion, thinly sliced
1/4 c white sugar
2 tbsps light soy sauce
1 clove garlic, minced
1/2 lb Asian barbequed pork, cubed
2 tbsps water
4 1/2 c all-purpose flour
1 (.25 oz) envelope active dry yeast
1/2 c boiling water
Directions
Step #1 Place the warm water in a large bowl, & sprinkle the yeast over the top.
Step #2 Stir in 1 c of the flour, & mix thoroughly.
Step #3 Cover with a cloth, & let this stand until bubbles appear, about 20 mins.
Step #4 Dissolve sugar & shortening in boiling water, & allow this to cool to lukewarm.
Step #5 Stir into the yeast mixture along with the remaining flour.
Step #6 When the dough becomes too stiff to stir, turn out onto a lightly floured surface, & knead until smooth, about 10 mins.
Step #7 Coat a large bowl with sesame oil, & place the dough inside.
Step #8 Turn over to coat, & cover the bowl with a damp cloth.
Step #9 Let rise in a warm place until doubled in size.
Step #10 Heat 2 tbsps of oil in a wok over medium-high heat.
Step #11 Add green onions & garlic, & stir-fry for about 30 seconds.
Step #12 Add pork, & fry for a min, oyster sauce, then stir in the the soy sauce, & sugar.
Step #13 Dissolve cornstarch in 2 tbsps of water, then stir the mixture into the pork.
Step #14 Cook, stirring constantly until the pork is coated with a thickened glaze.
Step #15 Remove to a bowl, & allow this to cool.
Step #16 Remove the dough from the bowl, & roll it out into one long log.
Step #17 Slice the log into 1 inch pieces.
Step #18 Flatten each piece into a 3 inch circle using the palm of your hand or a rolling pin.
Step #19 Place 2 tbsps of the pork filling onto the center of each circle, & gather up the edges around the filling & pinch together to close the bun.
Step #20 Place each bun seam side down onto a square of aluminum foil.
Step #21 Cover with a towel, & let rise for about 1 hr.
Step #22 Bring a couple inches of water to boil in a wok.
Step #23 Place a few buns at a time in a steamer, such as a bamboo steamer for a wok, or a fitted steam tray.
Step #24 Cover, & steam buns over briskly boiling water for 10 mins.
Step #25 Repeat with remaining buns.
