1/3 c sugar (for a sweet pudding add in a couple tbsps more sugar) .
2 c half-and-half cream (or use milk) .
1/4 tsp salt .
1/2 tsp cinnamon (optional) .
2 1/2 tbsps cornstarch .
1 egg yolk .
1 tbsp pure vanilla extract
Directions
Step #1 In a heavy saucepan mix sugar, half & half cream, salt, cornstarch, cinnamon & nutmeg (if using) bring to a boil whisking vigorously over med-heat/flame.
Step #2 As soon as the mixture is very hot whisk in the egg yolk & cook whisking vigorously until thickened & bubbly (about 2 mins).
Step #3 Remove from heat & as soon as possible stir in the butter until smooth & mixd.
Step #4 Transfer to a heat-proof bowl, then place a piece of plastic wrap directly over the pudding.
Step #5 Cool for about 30 mins on the counter then put in the fridge until cold.
