Arabic Style Rice With Lamb Meat Recipe

Ingredients
  • 1 1/2 lbs finely sliced lean lamb or ground lamb .
  • 1/4 tsp saffron (for color with chicken broth) (optional) .
  • 2 tsps salt .
  • 1/4 tsp cinnamon .
  • 3 tbsps butter .
  • 1/2 tsp black pepper .
  • 1/2 c pine nuts (pignoli nuts) (optional) .
  • 1/2 allspice .
  • 1/2 tsp nutmeg .
  • 3 1/2 c boiling chicken broth or boiling water (optional, add 1/4 tsp. saffron for color) .
  • 2 c long grain rice (Basmati is excellent)

Directions
  • Step #1 Brown lightly lamb meat in butter.
  • Step #2 Add salt & spices & stir for 2 mins.
  • Step #3 Add two c rice, stir & add the 3½ boiling Chicken Broth & mix well.
  • Step #4 Bring to Boil.
  • Step #5 Cover up & let simmer for 20-25 mins or until rice is tender & water is absorbed.
  • Step #6 Let cool for ½ hr & put in large serving dish & ready to serve.
  • Step #7 You can serve this with natural plain yogurt if desired.
  • Step #8 (optional).
  • Step #9 in the meantime rice is cooling saute ½ c pine nuts (pignoli nuts)in 3-4 tbs.
  • Step #10 olive oil or vegetable oil until light brown.
  • Step #11 Decorate rice & meat dish with the sauted pine nuts & serve.
