Marinated Shrimp And Scallop Brochette Recipe

Ingredients
  • 1 inch piece fresh ginger, peeled & sliced .
  • 1 lb sea scallops .
  • 2 red onions, cut into wedges .
  • 1/4 c fresh cilantro, sliced .
  • 2 tbsps soy sauce .
  • 1 (12 oz) bottle dark beer .
  • 1 dash fresh ground pepper .
  • 2 red bell peppers, cut into 1 inch squares .
  • 2 tomatoes, cut into wedges .
  • 1 dash salt .
  • 1 1/2 lbs medium shrimp, shelled & deveined .
  • 2 limes, juice & zest of .
  • 1/2 c sesame oil .
  • 12 skewers, soaked in water .
  • 5 shiitake mushrooms, cut in half .
  • 2 garlic cloves, peeled & crushed .
  • teriyaki sauce

Directions
  • Step #1 On 12 skewers alternately place the shrimp, onions, peppers, scallops, tomatoes & mushrooms.
  • Step #2 In a large shallow, large enough to lay the skewers flat, non-metalic pan, mix the ale through salt & pepper together & lay the brochettes in the marinade, turning every once in awhile.
  • Step #3 Grill on each side for about 3 mins.
  • Step #4 Serve the brochettes with rice & a side dish of Teriyake Sauce.
