Northern Italian Suffed Roast Turkey Recipe

Ingredients
  • 1/2 lb stuffed olives .
  • 5 slices pancetta .
  • 1/4 tsp black pepper, ground .
  • 1/4 c olive oil, Extra Virgin .
  • 1/2 tsp salt .
  • 1 1/2 lbs Italian sausage, bulk .
  • 1 1/2 oz mushrooms, sliced .
  • 1/2 lb roasted chestnuts, finely sliced .
  • 1 tbsp flour, all-purpose .
  • 12 lbs turkey

Directions
  • Step #1 Mix chestnuts, olives, sausage meat & mushrooms.
  • Step #2 Stuff Turkey with this mixture & sew closed.
  • Step #3 Place the turkey in a roasting pan with the breast up.
  • Step #4 Lay pancetta strips across the breast.
  • Step #5 Spice up with salt & pepper & cover with olive oil.
  • Step #6 Roast in a slow oven, 300F F until tender (cook according to turkey directions).
  • Step #7 When the turkey is nearly done, remove the pancetta slices, sprinkle the turkey with flour & baste it with pan juices.
  • Step #8 Return to the oven for 10 mins.
  • Step #9 Repeat the basting several times while the turkey cooks for 30 more mins.
