Mediterranean Pita Pocket Recipe

Ingredients
  • 1/2 c pitted kalamata olives, quartered .
  • 4 romaine lettuce leaves, center rib removed, washed & thinly sliced crosswise .
  • 2 whole pita pockets, each cut in half .
  • 1/2 whole cucumber, seeded & finely sliced .
  • 1 (8 oz) container plain yogurt .
  • 1/4 tsp dried oregano .
  • 8 oz deli roast pork or deli ham, thinly sliced .
  • 10 oz tray sweet red pepper strips, drained

Directions
  • Step #1 For dressing, in small bowl, mix yogurt, sliced cucumber & oregano: set aside.
  • Step #2 Gently open pita pockets.
  • Step #3 Place lettuce in the bottom of each pocket.
  • Step #4 Top with 1/4 each roasted pork or ham, pepper strips & olives.
  • Step #5 Drizzle each pita with 2-3 TBs dressing & serve.
