Red Chili Recipe

Ingredients
  • 2 tbsps mince garlic .
  • 1/4 c chili powder .
  • 2 lbs ground beef .
  • 1 c dry white wine .
  • 3 tbsps cumin .
  • 1 tbsp kosher salt .
  • 1 (8 oz) can sliced green chilies .
  • 2 (12 oz) cans sliced tomatoes with juice .
  • 3/4 c Fritos corn chips, pulverized .
  • 2 tbsps beef base, paste .
  • 2 c sliced onions .
  • 2 c shredded cheddar cheese .
  • 1 (4 oz) can chipotle chiles in adobo .
  • 2 c water .
  • 1 c minced red onions .
  • 2 tbsps black pepper

Directions
  • Step #1 Sear the beef on very high heat in your largest wide pot, or a seperate skillet.
  • Step #2 Stir every 2 mins or so.
  • Step #3 You want brown crust, not just for the beef to turn that dull grayish brown.
  • Step #4 When the beef is almost cooked through.
  • Step #5 Kill the heat & find something to prop the pan up on a tilt.
  • Step #6 Rake the beef to the top side & allow all the fat to run to the bottom.
  • Step #7 Remove it.
  • Step #8 Return to high heat & add your garlic & your onions.
  • Step #9 Allow to sweat & become fragrant.
  • Step #10 Add the wine to the pot, along with all of your salt & spices.
  • Step #11 Bring to a rapid boil, then lower the heat to a medium.
  • Step #12 Add in the beef base.
  • Step #13 After about 15 mins, add the tomato product & all of your chiles, followed by the water.
  • Step #14 This will give you a little room to simmer for a while without the chili being so thick that it wants to burn on the bottom.
  • Step #15 Simmer for 30 mins.
  • Step #16 Add your pulverized frito chips & let simmer for 20 mins.
  • Step #17 Let stand for 20 mins with no heat.
  • Step #18 Garnish with shredded cheddar, & minced red onion.
  • Step #19 Serve with warm tortillas, or more corn chips.
