Cornbread & Sausage Wheel Recipe

Ingredients
  • 1/2 onion, finely sliced .
  • 1/2 tsp salt .
  • 1 c flour .
  • 1 egg .
  • 1 c yellow cornmeal .
  • 1 c milk .
  • 4 tsps baking powder .
  • 2 tbsps sausage drippings .
  • 1 lb pork sausage links

Directions
  • Step #1 Preheat overn to 425F degrees.
  • Step #2 Brown sausage links in oven-proof skillet (cast iron works best) over low heat/flame on top of stove.
  • Step #3 Drain fat, reserving 2 tbsps.
  • Step #4 Arrange browned links in pan, so that they look like spokes of a wheel.
  • Step #5 Sift together flour, salt, baking powder & corn meal in a medium bowl.
  • Step #6 Make a well in the center & add egg, milk & the reserved 2 tbsps of drippings.
  • Step #7 Beat by hand until smooth, making sure not to over mix.
  • Step #8 Fold in sliced onions.
  • Step #9 Pour mixture evenly over suasage links.
  • Step #10 Bake at 425F degrees for 20 mins or until tester comes out clean.
  • Step #11 To serve, invert onto plate or platter.
  • Step #12 Cut into wedges, keeping the sausage link in the center of the wedge.
