Rolf Runkel's Tortilla Pie Recipe

Ingredients
  • 1 (6 oz) can tomato paste .
  • 1 c low-fat cheddar cheese, shredded .
  • 1 tbsp dried basil .
  • 1 (15 oz) can black beans, drained .
  • 1 (15 oz) can kidney beans, drained .
  • 5 (10 inch) whole wheat tortillas .
  • 1 (15 oz) can corn, drained .
  • 1 tbsp olive oil .
  • 1 tbsp taco seasoning .
  • 1 medium onion, sliced .
  • 1/2 c celery, sliced .
  • 1 (15 oz) can small white beans, drained .
  • 1 garlic clove, minced

Directions
  • Step #1 In a frying pan, celery, heat oil & saute the onions, & garlic until onions are transparent.
  • Step #2 Add corn, tomato paste, beans, & seasoning; heat thoroughly.
  • Step #3 Set two tbsps of the bean mix aside.
  • Step #4 Place one tortilla shell on a baking sheet lightly coated with cooking spray, & spoon a few tbsps of the bean mix onto it; spread evenly.
  • Step #5 Place a tortilla on top of beans, top this with mix again, & repeat until pie is five layers high.
  • Step #6 Add two tbsps water to the remaining mix & spread over the top of the tortilla (this will prevent it from drying out during baking).
  • Step #7 Bake at 350 for 35 mins.
  • Step #8 Sprinkle top with cheese, & bake this until cheese is melted.
  • Step #9 Let sit for 15 mins.
