Cornmeal Waffle Sandwiches Recipe

Ingredients
  • 3/4 c cornmeal
  • 1 c milk
  • Mayonnaise
  • 2 small tomatoes, sliced
  • 3 tbsps butter or margarine, melted
  • 1 tbsp baking powder
  • 1 tbsp sugar
  • 2 eggs, separated
  • 12 bacon strips, cooked & drained
  • salt & pepper to taste
  • 1/2 c shredded Cheddar cheese
  • 3/4 c all-purpose flour
  • 1 tsp salt

Directions
  • Step #1 In a mixing bowl, mix the first five ingredients.
  • Step #2 In another bowl, beat egg yolks.
  • Step #3 Add milk & butter; stir in theto dry ingredients just until moistened.
  • Step #4 Stir in cheese.
  • Step #5 In a small mixing bowl, beat egg whites until stiff peaks form; fold into the batter.
  • Step #6 Bake 12 waffles in a preheated waffle iron according to manufacturer's directions until golden brown.
  • Step #7 Spread mayonnaise on six waffles; top each with bacon, salt, tomato, pepper & remaining waffles.
  • Step #8 Serve as soon as possible.
