Cedar Planked Asian Rack Of Lamb Recipe

Ingredients
  • 2 tbsps orange juice .
  • 1/2 tsp red chili pepper flakes, crushed .
  • 4 lamb racks .
  • cedar planks, soaked overnight .
  • Marinade .
  • Garnish .
  • 1/2 c peanuts, coarsely sliced .
  • 1 tsp ginger, finely sliced .
  • 2-3 green onions, sliced .
  • 2 tbsps sherry wine .
  • Rack of Lamb .
  • 2 tbsps soy sauce .
  • 1/2 tsp sesame oil .
  • 1 tsp orange zest, finely sliced

Directions
  • Step #1 Whisk together ingredients & divide into 2 portions.
  • Step #2 Lightly season lamb with salt.
  • Step #3 Coat racks with one portion of marinade & set aside the other for the second batch.
  • Step #4 Cover up lamb & chill 2 hrs or overnight.
  • Step #5 Place lamb racks on cedar plank in pairs, facing one another, so the ribs interlock.
  • Step #6 Cook for 15 - 20 mins or until lamb registers 125 degrees on meat thermometer.
  • Step #7 Remove from grill & tent loosely with foil wrap for 5 - 10 mins.
  • Step #8 Slice into chops & serve garnished with sliced peanuts & green onions.
