Broccoli Frittata Recipe

Ingredients
  • 1/2 c freshly grated parmesan cheese .
  • 1/2 tsp fresh ground black pepper .
  • 1 tbsp olive oil .
  • 1 (2 oz) envelope knorr cream of broccoli soup mix .
  • 3 tbsps butter .
  • 3 c cooked broccoli florets .
  • 6 large eggs .
  • 1/4 c sliced shallots

Directions
  • Step #1 Preheat oven to 350°.
  • Step #2 Melt butter with the oil in a 10-inch ovenproof skillet over med-heat/flame.
  • Step #3 Add in the shallots; stir/saute 2 mins until softened.
  • Step #4 Add in the broccoli; stir/saute 2 mins.
  • Step #5 While the shallots & broccoli are cooking, soup mix, cheese, whisk the eggs, & pepper in a bowl.
  • Step #6 Pour the eggs & soup mixture into the skillet, stirring the broccoli into the eggs.
  • Step #7 Bake the frittata in the oven 18-20 mins until it is set.
  • Step #8 Let the frittata rest for 5 mins before cutting into wedges & serving.
