Greek-style Spinach-olive Pizza (vegetarian) Recipe

Ingredients
  • 1/2 c kalamata olives, sliced (or use black olives) .
  • 1 small red onion, thinly sliced .
  • 1 1/2 c shredded kasseri cheese (or use mozzeralla cheese) .
  • sun-dried tomatoes (use any amount desired) .
  • balsamic vinegar .
  • 1 (12 inch) pre-baked purchased Boboli pizza crusts .
  • 20 fresh spinach leaves (stems removed & coarsley sliced) .
  • 1/2 c pizza sauce (or to taste, see Kittencal's Pizza Sauce) .
  • 3/4 c crumbled feta cheese

Directions
  • Step #1 Spread the pizza sauce onto the boboli pizza crust, then sprinkle the Kasseri or mozza cheese over the sauce.
  • Step #2 Bake at 450 for about 7-9 mins or until the crust is lightly browned.
  • Step #3 After baking arrange the sliced spinach leaves over the cheese, then feta cheese, the sprinkle with sliced onions, tomatoes & then sliced black olives over the top.
  • Step #4 Mist balsamic vinegar over the top.
