Apricot Frost Recipe

Ingredients
  • 1/3 c lemon juice .
  • 3 egg whites, stiffly beaten .
  • 2 (15 1/4 oz) cans apricot halves .
  • 2 c whole milk .
  • 3 egg yolks, slightly beaten .
  • 1 1/2 c granulated sugar .
  • 1 c light cream .
  • 1 (3 oz) package orange flavor gelatin

Directions
  • Step #1 Drain apricots, reserving 1 c of the syrup.
  • Step #2 In a saucepan, sugar, mix gelatin, syrup & egg yolks.
  • Step #3 Heat, stirring until mixture comes to boil, then remove this from heat.
  • Step #4 Run apricots through a sieve [or otherwise mash them properly!], then add them to the gelatin.
  • Step #5 Add lemon juice, then stir in the milk & cream.
  • Step #6 Freeze in refrigerator trays of metal baking dish.
  • Step #7 Break into chunks & beat smooth.
  • Step #8 Fold in egg whites, then pour this into trays & freeze until firm.
