Ingredients
1 (6 1/2 oz) can albacore tuna, drained .
1 tsp light soy sauce .
1 tbsp cornstarch .
1 (3 oz) can chow mein noodles .
1/4 green bell pepper, cut into 2-inch strips .
3 tbsps granulated sugar .
1 (8 oz) can pineapple chunks .
1 vegetable bouillon cube .
1 tbsp vinegar .
1/2 c water .
1 tbsp unsalted butter
Directions
Step #1 Drain the can of pineapple, reserving the juice.
Step #2 In a saucepan mix 1/3 c of the pineapple juice [set aside the rest], pineapple chunks, bell pepper, bouillon cube & water.
Step #3 Heat the mixture to boiling, then reduce heat & simmer 5 mins.
Step #4 Mix the cornstarch with the remaining pineapple juice, soy sauce, vinegar & sugar, then stir that mixture into the hot pineapple mixture.
Step #5 Cook, stirring constantly, until the mixture is thickened & bubbling.
Step #6 Add the tuna chunks & butter, carefully stirring.
Step #7 Heat through.
Step #8 Heat the chow mein noodles, & spoon the tuna mixture over the noodles before serving.
