Kerala Chicken Stew Recipe

Ingredients
  • 1 tsp ground black pepper .
  • 1 inch piece fresh ginger, grated .
  • 3 lbs skinless chicken, & jointed .
  • 3 green chilies, finely sliced .
  • 400F ml coconut milk .
  • 1/4 tsp turmeric .
  • 1/2 c chicken stock .
  • 1 lb small potatoes, unpeeled .
  • 4 cardamoms, split open .
  • 3 cloves .
  • 1 bay leaf, crumpled .
  • 20 curry leaves .
  • 1 lb frozen mixed vegetables .
  • 1/4 tsp garam masala .
  • 2 onions, finely sliced .
  • 1 tbsp butter .
  • 1/2 tsp mustard seeds .
  • 2 garlic cloves, sliced .
  • 3 tbsps oil .
  • 2 inches cinnamon sticks, broken up

Directions
  • Step #1 Pound the ginger, turmeric & black pepper with mortar & pestle.
  • Step #2 Mix the sliced onions with the chillis.
  • Step #3 Heat the oil, add the mustard seeds, & butter in a deep pan, when they start to pop add the bay leaf.
  • Step #4 Stir.
  • Step #5 Add the cinnamom, fry 1 min Add the ginger paste, garlic & cardamoms, cloves & curry leaves.
  • Step #6 cook 1 min.
  • Step #7 Add the chicken & cook for 3 mins.
  • Step #8 Pour in the coconut milk & stock & cook for 5 mins.
  • Step #9 Add the frozen vegetables & potatoes, sprinkle with garam masala.
  • Step #10 Cook till the potatoes are tender.
  • Step #11 Serve with good crusty bread as a super dish, or with boiled rice as a main course.
