Hawaiian Chicken Fajitas Recipe

Ingredients
  • 4 tbsps unsweetened pineapple juice .
  • 1/2 c packed brown sugar .
  • 1/4 c honey .
  • 8 large flour tortillas .
  • 1/2 c tamari .
  • 1 tbsp sesame oil .
  • 1/2 c mayonnaise .
  • 1 tsp minced fresh cilantro .
  • salt & pepper .
  • 6 c baby mesclun .
  • 3 tbsps sour cream .
  • 1 tsp minced garlic .
  • 1 tbsp wasabi paste .
  • 4 boneless skinless chicken breasts .
  • 1/2 c unsweetened pineapple juice .
  • 2 tsps grated gingerroot .
  • 1 tbsp red pepper flakes .
  • 6 slices pineapples, fresh (1/2 inch slices)

Directions
  • Step #1 In-between wax paper lightly lb chicken until uniform in thickness.
  • Step #2 In a small saucepan mix together the tamari, red pepper flakes, unsweetened pineapple juice, sesame oil, brown sugar, grated ginger & garlic.
  • Step #3 Bring to a quick boil, reduce heat & let simmer for 3 to 5 mins, or until sugar dissolves.
  • Step #4 Remove from heat & let cool.
  • Step #5 Place chicken in a freezer bag & add marinade.
  • Step #6 Marinate at least 8 hrs.
  • Step #7 Prep Grill.
  • Step #8 While grill is heating up whisk together in a medium bowl the wasabi paste, mayo, cilantro, pineapple juice, honey, sour cream, salt & pepper.
  • Step #9 Grill the chicken & pineapple slices until done, about 30 mins.
  • Step #10 Quickly heat the flour tortillas on the grill.
  • Step #11 To assemble:.
  • Step #12 Slice chicken & pineapple.
  • Step #13 Place a small bed of greens on each tortilla, followed by the chicken & pineapple.
