Yankee Apple Cake With Lemon Sauce Recipe

Ingredients
  • 4 tsps baking powder .
  • 2 tbsps butter .
  • 1 egg, beaten .
  • 1 c sugar .
  • 1 1/8 c milk .
  • 1 lemon, juice of .
  • 2 c flour .
  • 4 large apples, peeled, cored & sliced or 6 medium apples, peeled, cored & sliced .
  • 2 tbsps sugar .
  • 3 tbsps cornstarch .
  • 1/2 tsp cinnamon .
  • 1 pinch salt .
  • 1/2 tsp salt .
  • 2 c boiling water .
  • Lemon Sauce .
  • 1 tbsp butter .
  • 1 lemon, zest of .
  • 3 tbsps sugar

Directions
  • Step #1 Sift together dry ingredients (flour, baking powder, 3 Tbs sugar & salt).
  • Step #2 Cut butter into dry mixture.
  • Step #3 Add egg & milk & mix well.
  • Step #4 Pour batter into a greased 8 X 8-inch pan.
  • Step #5 Cover up top this with neat rows of apple slices.
  • Step #6 Mix 2 Tbs sugar with cinnamon & sprinkle it over apples.
  • Step #7 Bake 25-30 mins at 400°F Shortly before serving, make lemon sauce: Mix sugar, cornstarch & salt.
  • Step #8 Stir in boiling water slowly.
  • Step #9 Bring to a boil.
  • Step #10 Cook until thick & clear, stirring constantly.
  • Step #11 Remove from heat & stir in the lemon zest & juice & butter until butter melts.
  • Step #12 Serve cake with hot lemon sauce.
