Tempeh Reubens With Vegan Thousand Island Dressing Recipe

Ingredients
  • 1 small onion .
  • 1 bay leaf .
  • 1/4 c Braggs liquid aminos .
  • 2 garlic cloves, peeled .
  • 2 c water .
  • 16 slices rye bread .
  • 2 tbsps ketchup .
  • 1/4 c vegan mayonnaise .
  • 3 tbsps relish .
  • Thousand Island Dressing .
  • 5 oz vegan monterey jack cheese .
  • 8 oz five grain tempeh, sliced .
  • 2 c sauerkraut

Directions
  • Step #1 Combine first five ingredients [to water] over med-heat/flame then add tempeh & bring to simmer.
  • Step #2 Reduce heat to medium low & let simmer 20 mins.
  • Step #3 Remove heat, cover & let cool.
  • Step #4 Make the Dressing by combining ingredients.
  • Step #5 Toast half the bread.
  • Step #6 Drain tempeh & remove all but tempeh slices.
  • Step #7 Place 3 slices of tempeh on slice of untoasted bread.
  • Step #8 Top with cheese.
  • Step #9 Broil or toast 3 to 5 mins.
  • Step #10 Cheese should melt.
  • Step #11 Top with 1/4 c of kraut on each 'sandwich'.
  • Step #12 Spread set aside bread with dressing.
  • Step #13 Top sandwiches.
  • Step #14 Slice in half on diagonal.
  • Step #15 Serve with a LARGE deli pickle sliced in quarters lenghtwise & some chips.
