Portuguese Bean Soup Recipe

Ingredients
  • 1/2 c sweet potatoes, sliced (1/2 inch unpeeled pieces) .
  • 1 1/2 c chicken broth or vegetable broth .
  • 1/2 (7 oz) can sliced tomatoes, undrained .
  • 2 tsps chili-garlic sauce .
  • 1/2 (8 oz) can cannellini beans, drained & rinsed .
  • 1/2 c white onions, sliced .
  • 1/2 tsp olive oil .
  • 2 tsps balsamic vinegar .
  • 2 c swiss chard, sliced & packed

Directions
  • Step #1 Heat a large saucepan over medium-high heat.
  • Step #2 Add oil & onion; cook 3 mins, stirring every once in awhile.
  • Step #3 Add broth, potato, & chili garlic sauce.
  • Step #4 Bring to a boil over high heat.
  • Step #5 Reduce heat & let simmer uncovered 5 mins.
  • Step #6 Stir in tomatoes & beans.
  • Step #7 Return to a simmer, then add swiss chard.
  • Step #8 Simmer 5 more mins or until sweet potatoes & chard are tender.
  • Step #9 Stir in vinegar & ladle into bowls.
  • Step #10 For Vegan omit the chicken broth.
