Ingredients
3 tbsps vegetable oil .
1 tbsp fresh ground black pepper .
2 bay leaves .
2 tsps dried oregano .
3 garlic cloves, peeled & sliced .
5 lbs beef brisket, fat trimmed .
1 tbsp sweet paprika .
1 (14 1/2 oz) can sliced tomatoes .
3 1/2 c low sodium chicken broth .
1 tsp salt .
3 medium yellow onions, sliced thin
Directions
Step #1 Preheat oven to 350 Degrees.
Step #2 Combine salt, pepper, paprika & oregano in small bowl.
Step #3 Rub spice mixture over meat.
Step #4 Heat oil in ovenproof pot with a tight-fitting lid, over medium-high heat.
Step #5 Brown brisket on both sides.
Step #6 Transfer brisket to a platter & pour off fat from pot.
Step #7 Add stock, tomatoes & bay leaves to pot & scrape the brown bits off the bottom of the pot.
Step #8 Return brisket & juices to the pot & scatter onions & garlic over meat.
Step #9 Cover up pot, transfer to oven & braise for 1 hr.
Step #10 Uncover pot & continue to braise for another hr.
Step #11 Push some of the onions & garlic into braising liquid surrounding brisket.
Step #12 Cook another 2 hrs.
Step #13 Meat is done when the meat is extremely tender.
Step #14 Spoon onions, tomatoes & juices on top when serving.
