Cilantro Pesto Recipe

Ingredients
  • 1/4 c cashews .
  • 10 large fresh spinach leaves .
  • 1 1/2 c cilantro leaves, packed .
  • 1/4 c olive oil, & flax oil mixd (adjust up to 1/2 c as necessary) .
  • 1 fresh garlic clove

Directions
  • Step #1 Chop cilantro, cashews, spinach, & garlic in food processor/blender until fine.
  • Step #2 Add oil & remaining ingredients & mix until incorporated.
  • Step #3 Pesto keeps for one week if stored in an air tight container in the refrigerator.
