Coats Colony Spicy Chili Recipe

Ingredients
  • 3 medium onions .
  • 1 tbsp onion salt .
  • 2 tsps cumin .
  • 4 tbsps chili powder .
  • 1/2 tbsp red peppers (or Black Pepper if no crushed Red Pepper) .
  • 1 lb tomatoes (sliced or whole) .
  • 1 c water (more or less as needed, not always necessary) .
  • 1/2 tbsp salt .
  • 1 tsp Tabasco sauce (Other brands are not guaranteed good taste!) .
  • 1 tsp minced garlic (2-3 Cloves) .
  • 2-3 lbs stew meat (or Ground Beef, Deer is especially good too) .
  • 1 tbsp cajun spices or italian seasoning (Both if you want) .
  • 3 (23 oz) cans ranch style beans or jalepeno ranch style beans .
  • 3 large green bell peppers (Red or Green Combo looks nice, Taste same) .
  • 3 (8 oz) cans tomato sauce .
  • 1 1/2 tbsps oregano .
  • 3/4 c vegetable oil

Directions
  • Step #1 Dice up Bell Peppers & onions into small cubes.
  • Step #2 Boil Stew meat until is light brown, only about 10 mins (to start of Boil).
  • Step #3 If Burger Meat, Just brown in a skillet.
  • Step #4 Don’t fully cook.
  • Step #5 If deer meat, drain & rinse off access stuff (deer people know what I mean).
  • Step #6 In a fry pan, Cook Bell Peppers, Onions & Garlic in Cooking Oil until onions are translucent.
  • Step #7 Combine all solid spices in a bowl.
  • Step #8 In a large pot, add Spices & all other ingredients together.
  • Step #9 You may need to add a tad bit of water, so the spices mix correctly.
  • Step #10 Cook on Low heat, enough to make it bubble a little, for about an hr with pot covered.
  • Step #11 CONSTANTLY CHECK & STIR.
  • Step #12 Heavy stuff goes to bottom.
  • Step #13 Don’t want it to burn.
  • Step #14 Then simmer with pot uncovered until chili thickens.
  • Step #15 Again, keep & eye on it & stir.
  • Step #16 Makes some pretty darn good chili.
  • Step #17 Looks REAL hot, but actually a good winter body warmer if amounts are followed just right.
  • Step #18 To lessen up on the “HEAT”, you can leave out the Hot Sauce, Red Peppers, & Jalepeno’s.
  • Step #19 Taste great covered with Cheese & sopped up with Jalapeno Cornbread.
