Three Happiness Orange Almond Rice Recipe

Ingredients
  • 1/3 c fresh parsley .
  • 2 tsps salt .
  • 6 tbsps vegan margarine or butter .
  • 1/2 c sliced almonds .
  • 1 c orange juice .
  • 1 c water .
  • 1 1/2 c raw long grain rice

Directions
  • Step #1 Combine butter, orange juice, water, salt & rice in 3 quart saucepan.
  • Step #2 Bring to a boil.
  • Step #3 Stir once or twice.
  • Step #4 Reduce heat, cover & cook without uncovering or stirring for 15 to 20 mins or until liquid is absorbed & rice tender.
  • Step #5 Place almonds in small skillet.
  • Step #6 Toast over med heat, stir constantly until Golden brown.
  • Step #7 When rice is finished stir these & the parsley inches.
