Passionfruit Cupcakes Recipe

Ingredients
  • 1 c self-raising flour .
  • 30 g butter, softened .
  • 2 eggs .
  • 1/2 c caster sugar .
  • 1/4 c passion fruit pulp

Directions
  • Step #1 Preheat oven to moderate (180C/160C fan-forced).
  • Step #2 Line 12-hole standard muffin pan with paper cases.
  • Step #3 Beat butter, sugar, eggs & flour in small bowl with electric mixer on lowish speed until ingredients are just mixd.
  • Step #4 Increase speed to medium, beat until mixture is changed to a paler colour.
  • Step #5 Stir in passionfruit pulp.
  • Step #6 Divide mixture among cases, smooth surface.
  • Step #7 Bake cakes about 20 mins.
  • Step #8 Turn cakes onto wire rack to cool.
