Lox And Cream Cheese Stuffed Cucumbers Recipe

Ingredients
  • 1 shallot, sliced .
  • 1 (8 oz) container sour cream .
  • 1/2 lemon, juice of, seeds removed .
  • 1 (8 oz) container Philadelphia Cream cheese, softened .
  • 2 cucumbers, unwaxed .
  • 1 bunch fresh dill, sliced .
  • 1 pinch salt & fresh ground pepper .
  • 1 (3 oz) package smoked salmon, sliced into small pieces

Directions
  • Step #1 Using a potato peeler, make stripes on the outside of each cucumber by peeling down the length of the cucumber, leaving every other section intact.
  • Step #2 Cut off the ends of cucumber & slice into 1-inch rounds.
  • Step #3 Using a melon baller, scoop out the seeds & inner flesh from the top 2/3's of each cucumber slice to create a tiny bowl in each piece of cucumber(DO NOT scoop all of the way through); Set aside.
  • Step #4 In a bowl, mix equal parts cream cheese & sour cream.
  • Step #5 Mix in salmon, lemon juice, shallots, salt & pepper, combining thoroughly.
  • Step #6 Transfer the mixture to a pastry bag with a star 8 tip.
  • Step #7 Pipe the filling generously into each cucumber section.
  • Step #8 Garnish with sprig of dill.
  • Step #9 As an alternative, use red pepper cream cheese.
