Step #2 Make several slashes on all sides - into muscle as well as through skin.
Step #3 Mix first 7 ingredients & rub all over shoulder, slipping rub up under skin.
Step #4 Let sit 1 hr while you prepare the grill.
Step #5 Load grill (must have a lid or cover - ours is a cut drum with hinges & smokestack) with 8 lbs of good quality charcoal.
Step #6 Place the charcoal in two piles or around the edges with central open area.
Step #7 Place an aluminum drip pan there.
Step #8 Light the coals & let burn until evenly coated in grey.
Step #9 Place shoulder, skin side down & cover grill.
Step #10 The goal is a temp of 325F if your grill has a lid thermometer.
Step #11 Adjust vents to maintain this temperature.
Step #12 Keep covered 2 hrs.
Step #13 After 1 1/2 hrs add 6 to 8 more coals on each side & re-cover.
Step #14 Repeat in an hr.
Step #15 When adding second batch of charcoal, grab roast with heat resistant mitten & tug to see if meat is beginning to slip & feel like it's giving.
Step #16 Another 1 - 2 hrs will get internal temp to 180 degrees F & the meat falling apart tender.
Step #17 Pull roast from grill & let cool overnight (we cooled in cold oven as Buster was observed plotting with the dogs & eyeing the roast).
Step #18 In the AM (Happy New Year!), shuck off skin & discard & do likewise with all bones.
Step #19 Chop & pull apart pork into shreds & put in 9 x 13 inch pan.
Step #20 Heat next 6 ingredients (starting with vinegar) in microwave for 5 mins.
Step #21 Using 1/2 c measure, pour 1 c of mop sauce over the pork.
Step #22 Pour an extra 1 1/2 c water over pork.
Step #23 Cover up pork in pan tightly with aluminum foil wrap & place this in 325F degree F oven for 45 mins.
Step #24 Ready to serve! Serve extra mop sauce at the table.
