Ingredients
5 tbsps light vegetable oil .
ghee .
1/4 lb okra .
ghee .
Crisp Fried Okra(use 1/2 c for rice) .
1/4 c toasted cashew nuts, pan-toasted in a little .
1/2 c dried onion flakes, toasted in a little .
oil, in a medium hot frying pan .
1 tsp lemon juice .
1 1/2 c basmati rice .
kosher salt, if desired (optional) .
Garnishes .
1/4 c toasted slivered almonds, pan-toasted in a little .
1/4 c currants or raisins .
silver aluminum foil wrap
Directions
Step #1 Wash the basmati rice thoroughly in several changes of water.
Step #2 Place the rice in a bowl.
Step #3 Add enough water to cover it by at least 1 1/2 inches.
Step #4 Let the rice soak for 1/2 hr.
Step #5 Drain the rice & reserve.
Step #6 While the rice is soaking, bring 12 c of salted water in a deep pot to a boil.
Step #7 Add the drained rice, stir, & bring to a second boil.
Step #8 Cook the rice for exactly 4 mins.
Step #9 Drain the rice & lightly pack it into a 2-quart greased bowl.
Step #10 Invert on an attractive platter.
Step #11 Lightly press around the rice to shape it into a dome.
Step #12 Decorate the rice dome with any or all of the garnishes.
Step #13 To adorn with silver foil wrap, first peel off the top layer of paper.
Step #14 Lift the bottom sheet, with the silver foil wrap still attached to it, & invert it over the rice at the center.
Step #15 Gently lift away the paper.
Step #16 CRISP FRIED OKRA:.
Step #17 Wash the okra & wipe dry.
Step #18 Trim both ends & slice into very thin (1/8-inh to 3/16-inch rounds).
Step #19 Heat the oil over high heat In a large-ish frying pan.
Step #20 When it is very hot, add the okra in a single layer.
Step #21 Cook over med-heat/flame, until it is cooked & crispy brown, turning & tossing, abot 20 mins.
Step #22 Sprinkle top with lemon juice, remove the okra with a slotted spoon, mix, & drain on paper towels.
