Very Basic Chicken And Dumplings Recipe

Ingredients
  • 1/3 c shortening .
  • 1 (10 1/2 oz) can condensed cream of mushroom soup .
  • 1 1/2-2 c all-purpose flour .
  • 3 garlic cloves .
  • 2 carrots, coarsely sliced .
  • 2 stalks celery, coarsely sliced .
  • 6 tbsps butter .
  • 2/3 c milk .
  • 1 large chicken .
  • 1 onion, cut into eighths .
  • salt & pepper, to taste .
  • herbs, as desired (such as thyme, rosemary, oregano, etc) .
  • 2 eggs, hard boiled & sliced

Directions
  • Step #1 Place chicken, carrots, onion, celery, garlic, salt & pepper & herbs in Dutch oven & cover with water.
  • Step #2 Bring to a boil.
  • Step #3 Reduce heat & let simmer for 2 hrs.
  • Step #4 Remove from heat.
  • Step #5 Allow chicken to cool; shred.
  • Step #6 Strain broth & return to Dutch oven.
  • Step #7 If necessary, add water or extra (packaged) broth to make 2 quarts.
  • Step #8 Add soup, butter, & salt & pepper to broth.
  • Step #9 Return to a boil.
  • Step #10 Meanwhile, make dumplings: Place flour in large bowl.
  • Step #11 Add shortening & milk.
  • Step #12 Stir until moistened.
  • Step #13 Add more flour as necessary to make a soft dough.
  • Step #14 Roll out dough on floured surface & cut into strips.
  • Step #15 Drop strips into boiling chicken stock.
  • Step #16 Boil 2-3 mins, stirring carefully.
  • Step #17 Fold in chicken & eggs.
  • Step #18 Simmer 20-30 mins.
