Italian Stuffed Peppers Recipe

Ingredients
  • 1 1/2 c Minute brown rice, uncooked .
  • 1 lb ground sirloin .
  • 2 c water, divided .
  • 3 large bell peppers (green, yellow or red) .
  • 1 small zucchini, sliced .
  • 1 tsp italian seasoning .
  • 1 1/2 c mozzarella cheese, divided .
  • 1 1/2 c reduced-fat spaghetti sauce, divided

Directions
  • Step #1 Preheat oven to 375 degrees.
  • Step #2 Bring 1 1/2 c of the water to boil in a medium saucepan.
  • Step #3 Add rice; cover & let simmer 5 mins.
  • Step #4 Remove from heat; let this stand 5 mins.
  • Step #5 Meanwhile, brown ground sirloin & Italian seasoning.
  • Step #6 Once meat is browned, 1 c of spaghetti sauce, 1 c of cheese, add in sliced zucchini, & the cooked rice.
  • Step #7 Stir well.
  • Step #8 Clean & cut peppers in half, removing seeds.
  • Step #9 Place into a 9 x 13 baking dish.
  • Step #10 Spoon the meat mixture into peppers.
  • Step #11 Top with the remaining 1/2 c spaghetti sauce & 1/2 c cheese.
  • Step #12 Add 1/2 c water to the bottom of the dish, cover with foil wrap.
  • Step #13 Bake 30 mins.
