Quinoa Pilaf With Cardamom And Sage Recipe

Ingredients
  • 1 tsp ground cardamom .
  • 1/2 tsp ground black pepper .
  • 1 c quinoa, uncooked .
  • 1/4 c lightly toasted pine nuts .
  • 2 tbsps olive oil .
  • 3 garlic cloves, minced .
  • 1 carrot, sliced finely .
  • 2 c chicken stock or vegetable broth .
  • 1 tsp salt .
  • 1/4 c raisins .
  • 1/2 onion, sliced .
  • 1/2 tsp ground sage

Directions
  • Step #1 Heat olive oil in 1-quart saucepan over medium-high heat.
  • Step #2 Add onions, & sautee until they begin to brown.
  • Step #3 Lower heat to medium & add garlic & carrots.
  • Step #4 Sautee for 1-2 mins, pepper, then add quinoa, cardamom & sage.
  • Step #5 Stir constantly for 2-3 mins.
  • Step #6 Add chicken or vegetable stock & salt, & bring to a boil.
  • Step #7 Cover up & let simmer on low heat for 15 mins or until all liquid is absorbed & quinoa is tender.
  • Step #8 Gently stir in the raisins, cover & allow to sit for 2-3 mins.
  • Step #9 Add lightly toasted pine nuts, fluff with a fork, & serve.
