Strawberry Shortcake With Balsamic Honey Recipe

Ingredients
  • 1/2 c vegetable shortening .
  • 1/4 c balsamic vinegar .
  • 1/2 tsp cream of tartar .
  • 1/4 c honey .
  • 2 c strawberries, hulled & halved .
  • 1/4 tsp baking soda .
  • 1/2 tsp salt .
  • 2 tbsps buttermilk (no need to separate buttermilk) .
  • 4 sprigs fresh mint .
  • 1/4 c low-fat whipping cream .
  • 1 tbsp sugar .
  • 2 c flour .
  • egg wash, for glazing (1 egg plus 1 tblspn. milk or water or cream) .
  • 1/2 c buttermilk .
  • 2 tsps baking powder .
  • Buttermilk Biscuits

Directions
  • Step #1 Preheat oven to 350°F Place all dry ingredients (for biscuits) & shortening in the bowl of an electric mixer.
  • Step #2 Mix, using paddle attachment, until crumbly.
  • Step #3 Add buttermilk & mix just until dough comes together.
  • Step #4 Gently roll out dough to 3/4-inch thickness & cut 4 biscuits with a round cutter.
  • Step #5 (a glass also works well).
  • Step #6 Glaze with egg wash & bake 15-20 mins.
  • Step #7 Split the biscuits in half horizontally.
  • Step #8 Toss the berries with balsamic vinegar & 1/2 of the honey.
  • Step #9 Set aside.
  • Step #10 Whip the cream in a small mixing bowl to soft peaks.
  • Step #11 Add the remaining honey & whip to stiff peaks.
  • Step #12 Spoon the strawberries over the bottom half of each biscuit.
  • Step #13 (Make sure you use that sauce as well!).
  • Step #14 Spoon the whipped cream over the strawberries & finish by placing the top half of each biscuit on the cream.
