Fabulous Penne A La Vodka Recipe

Ingredients
  • 1 (28 oz) can crushed tomatoes .
  • 8 tbsps butter, divided .
  • 1 onion, sliced .
  • 1 1/2 lbs rigatoni pasta or penne .
  • 1/2 tsp fresh ground pepper .
  • 1 tbsp kosher salt .
  • 6-8 fresh basil leaves, sliced or 1/8 tsp dried basil leaves .
  • 1/4 tsp dried oregano .
  • 12 oz fresh white mushrooms, quartered, about 3 c .
  • 1/4 c dry parmesan cheese, plus extra for the table .
  • 1 tbsp olive oil .
  • 1/8 tsp crushed red pepper flakes (to taste) .
  • 1 tsp salt .
  • 1/2 c vodka .
  • 3 c heavy cream

Directions
  • Step #1 Heat the oil In a large-ish saucepan; when hot, saute the onions until golden brown, about 5 mins.
  • Step #2 Add crushed tomatoes to the saucepan.
  • Step #3 Stir in the oregano, basil, salt & pepper & let simmer 1 hr to concentrate flavors.
  • Step #4 While the sauce is cooking, heat 4 T of the butter in a skillet over med-heat/flame.
  • Step #5 Saute the mushrooms & hot pepper flakes until the mushrooms are golden.
  • Step #6 Carefully add the vodka & let simmer for 5 mins to cook off the alcohol.
  • Step #7 Add the heavy cream & bring to a simmer; pour the cream mixture into the tomato puree; stir this to mix.
  • Step #8 Keep the sauce warm while cooking the pasta.
  • Step #9 Add the kosher salt to 6 quarts of water.
  • Step #10 Bring to a rolling boil.
  • Step #11 Add pasta to boiling water; cook uncovered until pasta is al dente, about 12 mins.
  • Step #12 Drain well.
  • Step #13 Melt the remaining 4 T of butter In a large-ish skillet.
  • Step #14 Stir in pasta to glaze, then add Parmesan cheese & mix thoroughly.
  • Step #15 Stir in 1/3 or the sauce & mix with the pasta; divide among plates.
  • Step #16 Top each plate with some extra sauce; pass remaining sauce & extra cheese at the table.
