Strawberry Muffins Recipe

Ingredients
  • 1 3/4 c all-purpose flour, unsifted .
  • 1/4 tsp ground nutmeg .
  • 1/4 tsp salt .
  • 1 tsp pure vanilla extract .
  • 1/2 tsp baking soda .
  • 1/4 c butter, melted .
  • 2 eggs, beaten .
  • 1 1/2 c strawberries, sliced .
  • 3/4 c sugar

Directions
  • Step #1 Combine the strawberries & 1/2 c sugar in a small bowl, & set aside for 1 hr.
  • Step #2 (If chopping fresh strawberries, I find that most of a 16 oz.
  • Step #3 package will make 1 1/2 c).
  • Step #4 While you wait, go ahead & preheat the oven to 425F degrees F & prep the muffin pans with baking c, or with grease.
  • Step #5 Strain to separate the liquid & the strawberries, keep both parts.
  • Step #6 Combine the flour, baking soda, nutmeg & salt; Set aside.
  • Step #7 Mix the eggs, butter, vanilla extract & remaining 1/4 c sugar & liquid from strawberries in a medium bowl.
  • Step #8 Add flour mixture, & stir until just mixd.
  • Step #9 Be careful not to over mix, it will be lumpy just make sure there are no more white patches.
  • Step #10 Fold in reserved strawberries carefully.
  • Step #11 Spoon/scoop into 12 prepared muffin pans, fill about 3/4th of the way.
  • Step #12 Bake for 20 mins, will be done when golden-brownish.
  • Step #13 Best enjoyed warm.
