Baby Greens With Hazelnut Parmesan Crisps Recipe

Ingredients
  • 3/4 c coarsely grated parmesan cheese .
  • Hazelnut Parmesan Crisps .
  • 6 slices prosciutto (optional) .
  • Vinaigrette .
  • 6 c lettuce, mesclun or baby greens .
  • Salad .
  • 3 tbsps lemon juice .
  • 2 tsps maple syrup .
  • salt & freshly ground black pepper .
  • 2 tbsps hazelnuts, toasted & finely sliced .
  • 3 tbsps olive oil

Directions
  • Step #1 Preheat oven to 350°F Line a baking sheet with parchment paper.
  • Step #2 Combine Parmesan & hazelnuts.
  • Step #3 Drop 12 spoonfuls of Parmesan mixture onto baking sheet 3 inches apart.
  • Step #4 Bake crisps for 8 to 10 mins, or until golden.
  • Step #5 Cool on baking sheet.
  • Step #6 Whisk together lemon juice, oil & maple syrup.
  • Step #7 Spice up with salt & pepper.
  • Step #8 Toss lettuce with vinaigrette & pile on individual plates.
  • Step #9 Coil each slice of prosciutto into a rose shape & set a rose in center of each mound of greens.
  • Step #10 Garnish each serving with two Parmesan crisps.
