Scallops And Pasta Salad Recipe

Ingredients
  • 1/3 c sliced sweet red peppers .
  • 1/2 c thinly sliced celery .
  • 1/2 c coarsely sliced red onions .
  • 1 c frozen peas .
  • 2 tbsps powdered fruit pectin .
  • 1 tbsp sugar .
  • 8 oz sea scallops (fresh or frozen) .
  • 1/4 c white wine vinegar .
  • 2 c water .
  • 1 tsp finely shredded orange peel .
  • 4 c torn fresh spinach .
  • 1/3 c orange juice .
  • 6 oz dried medium pasta shells

Directions
  • Step #1 For Dressing: In a small bowl stir this together the orange peel, pectin, vinegar, orange juice, & sugar until smooth.
  • Step #2 Cover up & chill at least 3 hrs or up to 24 hrs.
  • Step #3 Cook macaroni according to package directions; drain.
  • Step #4 Rinse with cold water; drain again.
  • Step #5 Meanwhile, thaw scallops, if frozen.
  • Step #6 Cut any large scallops in half.
  • Step #7 Bring water to boiling; add scallops.
  • Step #8 Return to boiling.
  • Step #9 Simmer, uncovered, for 1 to 3 mins or until scallops are opaque.
  • Step #10 Drain.
  • Step #11 Rinse under cold running water.
  • Step #12 For salad, In a large-ish bowl toss together cooked macaroni, peas, spinach, cooked scallops, onion, celery, & sweet pepper.
  • Step #13 Stir dressing; pour over salad.
  • Step #14 Toss to coat.
  • Step #15 Makes five 2-c servings.
