Healthier Yogurt Banana Bread Recipe

Ingredients
  • 1 tsp baking soda .
  • 1 tbsp wheat germ (optional) .
  • 1/2 c sliced walnuts (optional) .
  • 1/2 c chocolate chips (optional) .
  • 1 tbsp wheat bran or oat bran .
  • 1 c mashed ripe bananas (about 2-3) .
  • 1/2 tsp salt .
  • 1/2 c margarine or butter (you may substitute half applesauce to make it healthier!) .
  • 1/2 c plain yogurt or sour cream .
  • 3/4 c whole wheat flour (or use all white flour if you wish) .
  • 2 eggs .
  • 1 c sugar .
  • 3/4 c white flour (or try oat flour) .
  • 1 1/2 tsps vanilla

Directions
  • Step #1 Grease one 5"x9" loaf pan, or use 3 mini loaf pans.
  • Step #2 Some people even double the recipe & bake it in a bundt pan.
  • Step #3 Spray with cooking spray to coat pans.
  • Step #4 Cream margarine, sugar, eggs & vanilla.
  • Step #5 Add dry ingredients, nuts, then mashed bananas, & yogurt or sour cream.
  • Step #6 Add chocolate chips, if using.
  • Step #7 Mix well.
  • Step #8 Bake at 350 F for 1 hr.
  • Step #9 If using mini loaf pans, cook for about 45 mins.
